Beef, its what’s for dinner. Especially if you’re vacationing at a dude ranch like the Lazy Creek, the setting for Hard to Hold. In this latest installment of my Big Timber, Montana series, Paulina Osborn works to makes sure the Lazy Creek’s guests get only the best, all while trying to resist temptation in the form of sexy army vet Mack MacKinnon. To celebrate my new release, I thought I’d share one of my favorite steak recipes with you. This marinated flank steak is easy, delicious, and would fit perfectly on the Lazy Creek’s menu. Enjoy!

Ingredients:
1 1/2 pounds flank steak
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons olive oil
1 tablespoon grainy mustard
1 tablespoon horseradish
3 cloves garlic, crushed
Place the steak in a shallow container or a large ZipLoc bag. Mix together the soy sauce, Worcestershire sauce, olive oil, mustard, horseradish, and garlic. Pour the marinade over the steak, and marinade the steak in the refrigerator for at least one hour, up to overnight. One hour before you’re ready to cook, remove the steak from the refrigerator to come up to room temperature.Remove the steak from the marinade and shake off the excess. Cook the steak on a grill or in a pan (preferably cast iron) on the stove top, 5-7 minutes for medium rare, depending on the thickness of your steak. Let the steak rest for five minutes before slicing thinly against the grain.
